Low-fat Cooking

When it comes to low-fat cooking techniques, I could go on all day with ideas! One big tip, when it comes to eliminating the need for butter, is nonstick cooking spray. Nonstick sprays are great because there are flavored versions, like olive oil, lemon, and garlic, so you can add a lot of taste without fat.

If you coat your pan with cooking spray first, you just need the tiniest bit of oil. You can cook a piece of fish, ground turkey breast, chicken breast, or whatever you like, in a pan or a wok, toss in some vegetables in and produce a truly delicious low-fat stir-fry. And when I want to use oil, I use flavored olive oils. You just need a teaspoon, or maybe half of a tablespoon, to add lot of taste.

I also like marinating foods in fruit juice, garlic and fresh ginger for tons of flavor and moisture without fat. One of the simplest additions to a marinade, if you're creating an Asian dish, is to use a little bit of low-sodium soy sauce or teriyaki sauce.

When it comes to meats, ground turkey breast is one of my favorites because it's so versatile. It's important to make sure you're buying the right kind, though. Regular ground turkey can have almost as much fat as ground beef, so you have to make sure you're purchasing ground turkey breast if you want to eliminate all that fat.

Since it's so lean, cooking with ground turkey breast can be a bit tricky, though. If you're not careful, the lack of moisture can make it turn into a rock! My secret for really delicious turkey meatloaf and turkey meatballs, is to add some oatmeal and some chicken broth to the ground turkey breast. Believe it or not, when you cook it, the oatmeal absorbs the broth and you're left with meat that's tender and juicy, instead of something that has the consistency of a boulder!
