Low-fat CookingBy: Nancy Kennedy You can also give low-fat meals a lot of flavor by making your own sauces and dressings. Chicken stock is a great base for sauces, but be sure you're buying low-sodium broth. It's really incredible what you can create just by combining lemon juice, garlic, fresh basil and a touch of olive oil with some chicken stock in the food processor-it yields a pretty green sauce that you can use for cooking or as a marinade. For salad dressings, balsamic vinegar adds a lot of tang without any fat, and buttermilk works very well as a base for creamier dressings. I also use mustard and fresh ground pepper to jazz things up. So, instead of trying to follow someone else's recipe, experiment with these ingredients and you'll be amazed at what you can come up with-and you may find that you really enjoy it!
