These delicious mixed-vegetable recipes will have you humming in the kitchen while you cook. Health professionals encourage us to consume at least five servings of vegetables each day -- for cooked veggies, that works out to a total of 2.5 cups. In order to prevent cancer, reduce risk of heart disease, increase fiber intake and decrease blood pressure, eat at least five (or more) servings per day. When you prepare recipes that include a variety of types of vegetables, you receive the nutritional benefits of each.
