These delicious mixed-vegetable recipes will have you humming in the kitchen while you cook. Health professionals encourage us to consume at least five servings of vegetables each day -- for cooked veggies, that works out to a total of 2.5 cups. In order to prevent cancer, reduce risk of heart disease, increase fiber intake and decrease blood pressure, eat at least five (or more) servings per day.
