Fruit Salad with Ginger SyrupServe with brunch or as a dessertBy: Debby Maugans
Makes 4 servings Ingredients: 1/2 cup water Directions: Bring water, sugar and ginger to a boil in a small saucepan, stirring constantly until sugar melts. Reduce heat to medium and boil gently, uncovered, 10 minutes or until syrup reduces to about 1/4 cup. Remove from heat; let cool to room temperature. Pour through a sieve over a bowl to remove ginger; cover the liquid and refrigerate until chilled, at least one hour. To serve, layer two slices of pineapple and 1/4 of the strawberries and grapes on a plate. Pour syrup over fruit, dividing evenly. Garnish with mint.
