Pork Roast


Great for Sunday dinner or a family gathering

Pork Roast

Makes 6 servings

Ingredients:

1 (2 1/4 to 2 1/2 pound) pork loin roast
1/2 diced onion
1/4 cup firmly packed brown sugar
1 tablespoon olive oil
2 teaspoons minced garlic
1 teaspoon prepared horseradish
1/2 teaspoon cider vinegar
1 cup water

Directions:

Place the onion, brown sugar, olive oil, garlic, horseradish and vinegar in a 1 1/2- to 2-quart slow cooker; stir in water. Place the pork roast in the liquid, turning to coat. Cover and cook on low for 6 to 8 hours or on high 3 to 4 hours, turning pork occasionally. Transfer roast to a platter. Let stand 15 minutes before slicing.
